JOB DESCRIPTION : COOK
The ability to work collaboratively with the Manager to develop new recipes and implement procedures which assure high quality food is being produced and served.
To take direction from the home manager, and Senior Care Staff in the absence of the manager, regarding all aspects of food management and preparation.
Ability to draw up the weekly menu, incorporating The Nutritional Guidelines and Menu Checklist.
Ability to identify food to be purchased on a weekly basis ensuring there is no excess storage of food items. Ensure all food is used within its expiry date.
The ability to plan and organise workload.
Ability to work independently with minimal supervision.
Ability to apply principles of quantity cooking, including safe food handling and HACCP. To assure the safe preparation and storage of food and supplies.
Ability to accurately record HACCP and food production records.
Ability to record time/temperature information.
Ability to use food production techniques that conserve nutrients, preserve flavour, and enhance appearance of all food prepared.
Ability to stand/walk on hard floors.
Ability to adapt to changes in room temperature.
Ability to maintain a high standard of personal hygiene and wear the cooks uniform provided in the home - leaving it to be washed in the home on a daily basis -ie. Do not take the cooks clothing home for laundering.
Ability to maintain the preparation area and kitchen to a high standard of cleanliness.
Ability to work within current COSHH and Health and Safety Legislation.
Recognise the level of awareness, or lack of awareness, of the residents in relation to health and safety in the kitchen and food preparation area and take action accordingly to ensure their safety.
Ability to prepare a variety of meals taking into consideration the dietary needs.
Prevent waste of food and identify when and how waste of food can be prevented.
